When storing text documents from windows to a HFS volume should change the End Of Line character which in Windows is "\n" to Macs EOL character "\r".

Thats debatable. Don't forget the file system doesn't neccesarily know the difference between a binary and textual document (unless it interprets the finder information, which is shouldn't have to). Consequently you might cause massive problems with all non text applications by doing eol translations. In reality the best option is to realise the difference and keep files stored in whatever format you want to use them in. I personally have this issue with PC and UNIX eol's, but I just try to keep things in whichever format is most appropriate. I have an application that converts from one type of eol to another if you need it.
